I had other plans in Japan and stumbled on Akiko’s opportunity by luck. I love sake and sushi and Japanese cuisine, and this was a way to learn from someone who is an expert. I also did some art with Akiko’s husband, who makes his own stencils and creates amazing work. That was a bonus.

I understand so much about Japanese cuisine now. I am confident about using my new knowledge and skills at home and in restaurants.
